Vegetable Spice Paste

Ingredients

50 g Red chillies
2 - 3 bird eye chili
20 g shallots
20 g garlic
20 g turmeric
20 g galangal
20 g candlenuts
1/2 tsp coriander seed
1/4 tsp ground white pepper
1/2 tsp roasted dried prawn (shrimp) paste
1/2 tsp salt
3 tbsp vegetable oil

Instructions

1. Prepare spice paste. Combine all ingredients, ecept oil, in a stone mortar of blender (processor) and grind coarsely.

2. Heat oil in heavy saucepan. Add found spices and saute over medium heat unitl fragrant.

3. Remove from heat and leave to cool thoroughly before using or storing for future use.
