Ingredients
| 3 cups | vinegar |
| 1 cup | Fish sauce |
| 3 cloves | crushed garlic |
| 1/4 cup | crushed ginger |
| 1/4 cup | brown sugar |
| 3 tbsp | rock salt |
| 1/4 cup | lime juice |
| 1/4 cup | chopped lemongrass |
| 500 ml | cooking oil |
| 1/2 cup | margarine |
| 4 tbsp | annato seeds / powder |
Instructions
Chicken:Marinate chicken in vinegar, fish sauce, garlic, ginger, brown sugar, rock salt, lime juice, and lemongrass for 35 mins (no more, no less)
After 35 minutes, drain chicken. Throw away the vinegar mixture but keep the herbs and spices.
Glaze mixture:
In a sauce pan, put in the herbs and spices first then pour oil and add margarine. Bring to a boil. Set aside.
Grill skewed chicken till golden brown or till its cooked. Apply glaze once in a while. This will keep the moisture of the chicken in place.
Served best with garlic rice with pickled vegetables on the side.
