Ingredients

3 Eggs
1 cup milk
2 Tbsp. oil
3/4 cup All-purpose Flour
1/2 tsp. salt
Canola Oil for greasing pan

Instructions

Beat eggs, milk, salt and oil together in a blender.

Stir in the flour. Blend again and chill for at least 1 hour.

Heat a little oil in a 6-inch skillet. Pour about 2 Tbsp. batter into pan per blintz. Let bottom brown then turn out onto a clean cloth.

When cool, spread about 1 heaping Tbsp. of filling on pancake and roll up.

Place filled blintzes in a greased 9x13 pan and bake at 350 degrees F for about 20 minutes.

Serve with sliced fresh fruit and/or sour cream.

Filling: beat together 2 cups Farmer Cheese, 3/4 tsp. salt, 1 Tbsp. melted butter, 2 Tbsp. sugar, 1 tsp. fresh lemon juice, and 2 tbsp. Egg Beaters or 1/2 of an egg. This is the blintz filling.
