Ayam Bumbu Rujak Bu Surya (Coconut Red Chili Paste Chicken)

Ingredients

1/2 of 1.5lbs Chicken
1/2 cup shallots
3 Tbs garlic
3 candlenuts
2 stalks lemongrass
5 Kaffir lime leaves
6 red chili peppers (big)
8oz light coconut milk
2 tsp salt
1 tsp sugar
2 Tbsp oil

Instructions

Grind the shallots, garlic, candlenuts and red chili peppers in the food processor until it turns into smooth paste.

Heat the pan and add the oil. Add the paste and stir fry until fragrant. Add chicken and put in the lemon grass and the lime leafs in and cook for about 5-10 minutes. Add the salt and sugar to taste.
Add the coconut milk in and let it simmer for about 30 minutes in low heat or until the chicken is cooked.

Serve it with steamed rice and a side of vegetable dish
