Crave a bit of punch but yet flavorful. Have to try this recipe. It's chicken simmered in some red chili peppers, shallots, garlic, lemon grass and kafir lime leaves and of course boiled in coconut milk. This dish will take you to a different level. It has some kick of spice but mild enough to eat on a daily basis with steamed rice and a side of vegetable. This recipe is from my mother in-law. She has simplified the recipe but kept the flavor intact.

Ingredients
| 1/2 of 1.5lbs | Chicken |
| 1/2 cup | shallots |
| 3 Tbs | garlic |
| 3 | candlenuts |
| 2 stalks | lemongrass |
| 5 | Kaffir lime leaves |
| 6 | red chili peppers (big) |
| 8oz | light coconut milk |
| 2 tsp | salt |
| 1 tsp | sugar |
| 2 Tbsp | oil |
Instructions
Grind the shallots, garlic, candlenuts and red chili peppers in the food processor until it turns into smooth paste.Heat the pan and add the oil. Add the paste and stir fry until fragrant. Add chicken and put in the lemon grass and the lime leafs in and cook for about 5-10 minutes. Add the salt and sugar to taste.
Add the coconut milk in and let it simmer for about 30 minutes in low heat or until the chicken is cooked.
Serve it with steamed rice and a side of vegetable dish
